This bottle fermented wine exhibits a brilliant vibrancy of fruit, coupled with secondary complexity derived from extensive tirage maturation. A sophisticated style with fantastic poise and finesse.

Perfectly timed rains throughout the growing season established a balanced canopy and perfectly sized bunches. Slightly cooler conditions prevailed leading into harvest which permitted extended hang time and flavour development. Grapes were hand picked the last week of April.

A densely structured wine with great presence and minerality following more than ten years tirage maturation. Fragrant aromas of citrus blossom, lemon curd and oyster shell lead to a palate that shows great tension and poise. The firm natural acidity provides a backbone to flavours of Granny Smith apple, white peach, lime essence and lemon myrtle honey. The combination of ocean ageing and late disgorging has enhanced yeast autolysis and the secondary characters of brioche, sourdough crust and pastry. A presence in the glass that defies its age, this wine shows a fine and persistent bead with a sophisticated line and length.
